I love the spices and vegan-friendly ingredients in Indian cuisine, and of course, the fact that most Indian dishes just feel like a warm, comforting hug. Lentils are an excellent way to get protein. They are also a powerhouse when it comes to fiber. Served with rice, greens and maybe a little gluten-free flatbread, this filling meal will hit the spot, guaranteed.

Serves 3

2 tbsp (30 ml) olive oil

½ onion, chopped

1 clove garlic, minced

1½ tsp (4 g) ground cumin

1 tsp (2 g) garam masala

½ tsp ground coriander

⅛ tsp cayenne pepper

½ red bell pepper, chopped

¼ cup (45 g) diced tomato

1 cup (200 g) dried red lentils

½ tsp grated fresh ginger

1 bay leaf

Salt

Zest and juice of ½ lemon

Serving Suggestions

Gluten-free flatbread (here)

Cooked white rice

Chopped parsley

Chopped green onions
